Cast iron trout

This is our now famous cast iron trout.

A searing hot, twelve year seasoned cast iron skillet with a thin shimmering layer of thyme scented pork fat crisps the cornmeal crusted trout skin. It is then quickly top broiled with sea salt and bay spice.

We serve this with a sautéed medley of seasonal, local organic vegetables.
